Week of Wines



Our week of wines celebrates the emergence of Chile’s wine industry on the international scene in the mid nineteen eighties. Chile is unique in that is able to grow it all of its grapes on their own roots without having to graft the vines as is done in Europe and the United States. The resulting grape varieties like cabernet sauvignon, merlot, chardonnay, and sauvignon blanc produce world class wines of distinct bouquets and flavors. While the full effects of terroir still have to develop in Chile the results so far have catapulted Chilean wineries like Vina Casablanca, Concha y Toro in to the same league as French and American vintners.

During our Week of Wines we will explore the world of Chilean viticulture combined with five star cuisine of our internationally trained gourmet chef. We will devote our first evening to Chile’s best red wines from the Maipo Valley region and taste a variety of cabernets and genuine merlots. The white wines of Chile’s Casablanca Valley will follow the third evening with the introduction of crisps chardonnays and sauvignon blancs known for their fruity palette and firm acidity.

On day three we will host an après-adventure wine and cheese party. Here our chef will pair a variety of fine wines and cheeses. We will discover what wines will go best with what cheeses like goat, havarti, blue, brie. Different wine characteristics like acidity and tannin levels need to be considered in order to match the right chees with the right wine.

On day four we will sample wines from Chile’s long lost Carmenere (Car-men-air) grape variety. Planted in Chile from vineyards in Bordeaux in the 1850s this variety is now almost impossible to find in Europe because of the 1880s phylloxera outbreak. It was rarely replanted in favor of varieties that produced a higher yield. Carmenere grapes benefit from Chile’s longer and warmer growing season over that of Bordeaux and the rest of Europe. Rarely memorable on its own the best Carmenere wines become outstanding when the grapes are blended or grown with other varieties. Long mistaken for merlot until the 1980s, Carmenere wines have now become a national symbol of Chile. Known for their low tannin levels and fruity taste they are a delight to drink and an ideal match for a wide range of foods.



After each dinner we will sample a dessert wine especially selected by our chef, like Concha y Toro’s Late Harvest. Many of these wines can’t be had on the international scene because of low production volumes caused by limited harvests.


On day five we will depart from our week of wines theme and have our traditional farewell fiesta with traditional Chilean asado.
